These brownies came to me in a dream… literally. I dreamt of the fudgy-est chocolatey-est brownies imaginable. So I spent the next several weeks recipe testing until I finally came up with the PERFECT Fudgy Brownie recipe. This is my go to brownie recipe and a serious crowd pleaser.
This recipe is pretty straightforward and simple but I have a few tricks up my sleeve that I want to share!
Tips & Tricks
How to Achieve That PERFECT Crinkly Top? – WHISKING! The answer to that question is making sure you’re whisking the chocolate+egg mixture enough prior to adding flour. I like to whisk for a couple minutes.
How to Get That Perfectly Fudgy Texture? – The texture of brownies change DRASTICALLY when you refrigerate them. To achieve the dense fudgyness you can’t skip letting them chill in the fridge! This will also give you clean lines when cutting your squares. However, you want to eat them either at room temperature or warmed up. When the brownies are cold, I find that the bits of chocolate harden too much and take away from the dreamy texture.
Choosing Chocolate – I recommend using high quality chocolate chips for this fudgy brownie recipe. The mix of semi sweet and bittersweet chocolate gives these brownies a more complex flavor and makes them not overly sweet.

Use a double boiler to melt the butter. Then add the brown sugar, granulated sugar, cocoa powder, espresso powder, and semi sweet chocolate chips to the melted butter in the double boiler. Once those are all melted together transfer into a large bowl.

Add in the eggs, vanilla extract, and salt. Whisk on medium speed for 2 minutes. In a small bowl combine flour and baking powder. Then sift that into the melted chocolate mixture. Mix until mostly combined. Add and fold in the bittersweet chocolate chips.

Pour batter into a 9x9 pan lined with parchment paper. Bake @ 350 degrees Fahrenheit for 35 minutes.

Let the brownies cool until they reach room temp. Then place in the refrigerator for at least an hour (preferably overnight.) Remove from fridge and slice. Store at room temperature.
